Chicken Veggie Stir Fry

4 chicken thighs
2 stalks celery
1/2 each red, orange, green pepper
7 mushrooms
1 pkg oriental flavoured noodles (pre-cooked)
handful baby spinach

1/4 c soy
1 tbsp lime juice
1/4 c water
1/2 tbsp cornstarch

Pomegranate & Mango Cheesecakes

Crust:
1/2 c butter
1/4 c brown sugar
1 egg
1 1/4 c flour
- bottom baked for 10ish minutes; sides not baked

Filling:
3 pkg cream cheese (2 light, 1 reg)
3/4 c sugar
3 eggs
1 tsp-ish vanilla

* 1/3 - added 1/3 c mango puree, put on a graham crust
* 1/3 - added 1 tbsp lime juice
* 1/3 - added pomegranate glaze & some juice

Glaze:
1 473 ml bottle POM
1/4 c brown sugar
1 1/2 tbsp cornstarch
- as written

Mango Cheesecake

Allrecipes, I think
1 (9 inch) graham cracker crust

2 (8 oz) pkgs cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs

1/2 cup mango puree

1/2 cup frozen whipped topping, thawed

1 Preheat oven to 325 degrees.
2 In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time.
3 Add mango puree, and stir gently until well blended. Carefully spread over the batter in the crust.
4 Bake in preheated oven for 35 to 40 minutes, or until centre is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

Creamy Avocado Dip

Ingredients

  • 4 avocados
  • 1 cup fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 1 jalapeno, seeded and roughly chopped
  • kosher salt and black pepper
  • cut-up vegetables for dipping (such as carrots, cauliflower, broccoli, and jicama)

Directions

  1. Scoop the avocados out of their skins and place in a food processor.
  2. Add the cilantro, sour cream, lime juice, jalapeƱo, 1 teaspoon salt, and 1/4 teaspoon pepper and blend until smooth. Serve with the vegetables.

Chile Cinnamon Brownies - Take 2

3/4 c. flour
1 tbsp cinnamon
2 tsp chipotle chile powder
1 tsp bpow
1 tsp salt

5 squares semi-sweet
5 squares unsweetened
1 1/2 sticks butter (3/4 cup)
1 1/4 c. sugar

Imperial Cheese Bites

Mom
Imperial Cheese Snacks

1/2 c butter
250 gram pkg..Imperial cheese
1/2 tsp………….baking powder
2.5 c……………..rice krispies
1.5 c……………..flour
1/4 tsp …………cayenne pepper
1 tsp……………..dry flaked onions (opt)
  1. Mix butter and cheese well.
  2. Add other ingredients.
  3. Make small balls and press with fork.
  4. Bake 15 minutes at 350 degrees.
  5. Makes 70-100 bites, depending on size

- instead of cayenne powder, chipotle chili powder

Double Chocolate Chip Cookies

1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup semisweet chocolate chips

Method
1. Preheat oven to 350 degrees F.
2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

Royal Icing

4 cups powdered sugar/icing sugar (1 kg)
4 tbsp meringue powder or 4 egg whites
10 tbsp warm water (only if using meringue powder)
Snack-size plastic bags & twist ties

In a spotlessly clean, grease-free mixing bowl, mix the ingredients. Beat until the icing forms stiff peaks (approx. 6-8 minutes with heavy-duty mixer, 10-12 with hand-held mixer).

Transfer icing to individual bags (fill only about half full) and twist tie ends shut. Snip small hole in one corner of bags. When icing is not in use, store in airtight container in fridge. Icing can be kept this way for approx. 3 days.

Today's mod - about 1/2 cup cocoa; didn't seem to change effectiveness of cement

Gingerbread Dough

1 cup shortening
1 cup sugar
1 tsp baking powder
1 tsp salt
1 cup molasses
1 tsp ginger
1 tsp cinnamon
5 cups flour
4 tbsp water

Mix first seven ingredients until well blended. Add flour and water and mix until dough forms. Roll directly onto cookie sheets and cut pattern pieces. Bake 350 for 10 to 15 minutes.

Best Ever Chocolate Chip Cookies

1 cup butter, melted
2 cups brown sugar
2 eggs
2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1-2 teaspoons cinnamon
2 cups semisweet chocolate chips

1 Preheat the oven to 375 degrees F (190 degrees C). Line cookie sheets with parchment paper.

2 In a medium bowl, stir together the melted butter and brown sugar until smooth. Beat in the eggs one at a time. Combine the flour, baking powder and baking soda; gradually stir into the sugar mixture. Fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.

3 Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Today's mod: 1 tbsp (ish) coconut rum

Apple "Pie"

Chocolate Chip Coconut Cheesecake Bars

1 package Chocolate chip cookie dough
8 ounce Cream cheese, softened
1 Egg
1/2 cup Coconut, flaked
1/2 cup Sugar

1. Preheat oven to 350 degrees F.
2. In a small bowl, combine sugar, egg and cream cheese; beat until smooth. Stir in the coconut.
3. Remove half of the cookie dough from wrapper and press half of the dough in the bottom of a 8" or 9" square pan. Spread the cream cheese mixture over dough. Combine and sprinkle remaining half of cookie dough over cream cheese mixture.
4. Bake at 350? F. for 35-40 minutes or until golden brown and firm to the touch. Cool for 30 minutes.
5. Refrigerate at least 1 hour or until chilled. Cut into bars and serve chilled.

(I forgot to put the coconut in the cheesecake, so threw it on top)

Vanilla Bean Cinnamon Ice Cream

Vanilla Bean Ice Cream Recipe:

6 egg yolks
1 cup (100gr) sugar
2 cups whole milk
1 cup heavy cream
1 vanilla bean, split open and seeded

In a large bowl, whisk the egg yolks and the sugar until pale and thick. In a saucepan set over medium heat, bring the milk, cream and vanilla bean to a simmer, without letting it come to a full boil. Slowly pour the hot cream over the egg yolks mixture while whisking to temper the egg yolks. Pour the whole mixture back into the saucepan and cook over low heat, stirring constantly, until the cream coats the back of spoon. It should register 170F on a candy thermometer. At this point you have made a custard sauce, also known as "creme anglaise". Let cool completely, strain and refrigerate until cold, preferably overnight.
Once and the custard is cold, process according to your ice cream maker manufacturer's instructions.


Cinnamon Ice Cream Recipe: place a cinnamon stick in the soft ice cream and let it freeze 2 hours or overnight to get all the flavor from the spice without the brown color. Remove the stick before using.

Apple "Raisin" Snack Cakes

- 2 eggs
- 1 cup unsweetened applesauce
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp sugar
- 1 cup white flour
- 1/2 cup ww flour
- 2 tsp baking powder
- 1 tsp vanilla
- 1/3 cup dried cranberries
- 1 chopped granny smith
- 1/4 cup chopped dried apricots

1. Mix everything
2. Cook til brown on both sides.

* too much apple (half would be good)
* GF so-so --> cook fine, but don't really brown; pan much prettier, but a little doughy

good potential, but not quite there...
