Roasted Cauliflower with Apple and Dill

  • 1 large cauliflower (2¼ pounds whole; 7 cups chopped)
  • 1 large red onion
  • 2 apples
  • 2 tablespoons fresh dill (do not substitute dried)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • Fresh ground black pepper

INSTRUCTIONS

  1. Preheat oven to 450°F.
  2. Chop the cauliflower into florets (watch the video below). Slice the onion. Core and chop the apples into bite-sized pieces (no need to peel). Coarsely chop the dill.
  3. Place the cauliflower, red onion, and apples into a large bowl and mix together with the olive oil, kosher salt and plenty of fresh ground pepper.
  4. Line a baking sheet with parchment paper. Place the chopped vegetables on the baking sheet, then roast for 40 minutes until the cauliflower is slightly browned, stirring twice during the baking time. Remove from the oven, stir in the dill, and place in a serving dish. Serve immediately.

Smoked Salmon Dip

  • 1/4 cup mayonnaise
  • 4 ounces cream cheese
  • 1 tablespoon capers, rinsed and drained
  • 1 tablespoon red onion, diced small
  • 1 to 2 teaspoons fresh lemon juice
  • 1/2 teaspoon prepared horseradish
  • 2 ounces plus 2 more ounces thinly sliced smoked salmon, coarsely chopped
  • 1 tablespoon chopped fresh parsley
  • Bagel chips, for serving


In a food processor, combine mayonnaise, cream cheese, capers, red onion, lemon juice, horseradish, and 2 ounces smoked salmon. Process until smooth, about 20 seconds. Transfer to a small bowl and stir in remaining 2 ounces smoked salmon. Top with fresh parsley and serve with bagel chips.

Pretty much as written. But with dill - duh! And mustard

Butternut Squash Soup

1 butternut squash, roasted
1 acorn squash, roasted
some butter
tsp ginger, choppified
1/4 onion
some dill
chicken powder (lots-ish)
a little bit of curry powder
4 ish cups of water
some chipotle powder
some ancho powder maybe
1/2 pkg cream cheese
