Christmas pinwheels

INGREDIENTS

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter
  • 1 1/3 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Red food coloring
  • Green food coloring



INSTRUCTIONS

In a medium bowl, sift together the flour, baking powder and salt.
In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until smooth, about 2 minutes. Add the sugar and continue beating until the mixture is light and fluffy, about 3 minutes. Add the eggs one at a time, beating between each addition, then add the vanilla.
Turn the mixer off. Add the flour and then beat just until combined. Remove the dough and separate it into three equal pieces. Shape one piece of the dough into a 4- by 4-inch square, wrap it securely in plastic wrap and place it in the fridge. (This will be the white portion of the cookies.)
Return one of the remaining pieces of dough to the stand mixer bowl, and with the mixer on "low," add in the red food coloring until it reaches your desired color. Remove the red dough, shape it into a 4- by 4-inch square, wrap it securely in plastic wrap and place it in the fridge. (This will be the red portion of the cookies). Clean out the bowl to remove any red food coloring residue.
Add the final piece of dough to the stand mixer bowl, and with the mixer on "low," add in the blue food coloring until it reaches your desired color. Remove the blue dough, shape it into a 4- by 4-inch square, wrap it securely in plastic wrap and place it in the fridge. (This will be the blue portion of the cookies.)
Refrigerate the dough for 30 minutes.
Remove the dough from the fridge and cut each square in half to form two rectangles. Wrap half of each color of dough in plastic wrap and return it to the fridge. Place the red dough in between two pieces of wax paper and roll it into a rectangle about 1/8-inch thick. Roll out the white dough between two separate pieces of wax paper until it is a rectangle about 1/8-inch thick. Roll out the blue dough between two separate pieces of wax paper until it is a rectangle about 1/8-inch thick.
Peel the top layer of wax paper off of the red dough and then peel the wax paper off one side of the white dough and use the other side to transfer the white dough on top of the red dough. Peel off the wax paper from one side of the blue dough and use the other side to transfer it atop the white dough. Very lightly roll the three layers together.
Starting at the shorter end of the rectangle, roll the dough as tightly as possible into a log. Repeat the rolling and stacking process with the remaining dough in the fridge. Wrap the logs in wax paper and then plastic wrap and refrigerate them for 1 hour.
Remove the dough logs and roll them on the counter several times so they don't develop a flat side. Alternately, stand the rolls up in glasses in the fridge. Refrigerate the dough for 4 more hours.
When ready to bake, preheat the oven to 350ºF and line two baking sheets with parchment paper. Remove the dough from the fridge and slice each log into 1/4-inch rounds. Place the rounds about 2 inches apart on the baking sheets, as the cookies will expand when baked.
Bake the cookies for 9 to 11 minutes until pale golden, and then transfer them to a wrack to cool completely.

Cranberry Rosemary Spritzer

So pretty for Christmas!! Skip the bourbon for a delicious mocktail.

Cranberry Rosemary Spritzers

makes 4-5 drinks
  • 2 sprigs fresh rosemary
  • ½ cup sugar
  • 1 cup water
  • ice
  • 2 cups cranberry juice (you can use sweetened)
  • 1 ¼ cup bourbon
  • 1 12oz. bottle ginger beer
  • pomegranate seeds & rosemary sprigs for garnishing
To make the Rosemary Simple Syrup:
Put rosemary sugar and water in a small saucepan and heat over medium high heat until simple syrup boils. Turn off heat and let rosemary steep in the simple syrup for at least an hour.
To make the Spritzers:
In a large pitcher, mix cranberry juice, rosemary simple syrup, bourbon & ginger beer with ice. Stir well.
To serve, fill each cup with the spritzer and garnish with pomegranate seeds & a sprig of fresh rosemary.

Cranberry Christmas Salsa

Cranberry Christmas Salsa

Ingredients: Cranberry, center,
 and, clockwise from left,
jalapeno, onion, ginger,
chipotle pepper, pineapple,
cilantro, limes

 In a saucepan cook until slightly juicy

 1 bag of chopped cranberries
 2 tsp minced ginger
 1 tsp salt
 1 to 2 tsp smoked chipotle pepper 
 1 tsp cinnamon
 Juice from 1/2 a lime
Secret ingredient: 1 tsp cumin


 Don't cook this too long. You're just blending flavors a bit to take the tannic edge off the cranberries. If you want less spicy heat, substitute some liquid smoke for the powdered chipotle pepper, to your taste.

In a small skillet quickly sear 

1/2 medium onion diced
1 chopped jalapeno pepper

Again, don't cook for too long. You're just taking the edge off those onions and blending that jalapeno pepper a bit. Add this to the cranberries. Also add

a handful of crushed cilantro (optional)
1 chopped fresh pineapple
1/2 cup sugar

Crushing cilantro helps modulate that soapy flavor which so many folks dislike. Cilantro is the authentic salsa seasoning, but this salsa is great without it, too. I tried mint as a substitute and I felt like the cilantro tasted better.

I kept the pineapple fresh because it has an enzyme in it that prevents the cranberries from gelling up. That gives the dip a more usual salsa consistency.

Stir things up well and give this a taste test. Add more sugar if the cranberries turned out tarter than expected, or a pinch more salt if you think it's too sweet. This is incredibly delicious and gets more so after an overnight chill in that deep dark refrigerator. Serve the dip with some red and green tortilla chips and try not to eat — er I mean test — it all before the party!

Yummy Stuffing

3-4 c potatoes, cubed
chicken broth to cover the potatoes
-----------> bring to boil, simmer 5 minutes
2 tbsp butter, melted
-----------> fry potatoes, set aside in large bowl

1/2 c raisins, chopped
1/2 c cranberries, chopped
1/2 c apricots, chopped
1/4 c apple juice
1/4 c brandy
------------>bring to boil, simmer for 2 minutes, set aside

1/4 c butter, melted
1 1/2 c celery
1 1/2 c onion
------------> cook until celery loses crunch
500 g sausage, crumbled
------------>cook until browned
1 tbsp fresh parsley, chopped
1 tbsp fresh rosemary, chopped
1 tbsp fresh dill, chopped
1 tbsp sage
1/2 c pumpkin seeds
1/2 c pinenuts 
------------>also add dried fruit, cook 3 minutes
------------>add to potatoes in large bowl
2 eggs
------------> mix gently
------------> stuff, cook

As per M, raisins instead of figs, add pumpkin seeds, substitute diced potatoes for stuffing mix (cook in chicken broth for ten minutes, then fry in butter), add feta at the end


INGREDIENTS
  • 1, (4 to 5 lbs / whole turkey breast (2.2 to 2.5 kg) halves), boned, butterflied
  • 1/2 cup (125 mL) each chopped figs, cranberries and apricots
  • 1/4 cup (50 mL) each apple juice and brandy
  • 1/4 cup (50 mL) butter
  • 1 1/4 cup (300 mL) each chopped onion, chopped celery
  • 1/2 lb (227 g) each hot and sweet pork sausages, casings removed
  • 1 tbsp (15 mL) each chopped fresh parsley, rosemary, sage
  • 1/4 cup (50 mL) hazelnuts, toasted, chopped
  • 4 cups (1 L) seasoned stuffing mix
  • 1 cup (250 mL) chicken broth
  • 2 large eggs, beaten
  • Melted butter, salt, pepper

METHOD
  • Heat oven to 325º F.
  • Place dried fruit in small sauce pan with apple juice and brandy. Bring to boil, reduce heat to simmer and cook 2 minutes.
  • Melt butter in large skillet. Add onion and celery and cook 5 minutes.
  • Crumble sausage and add to skillet. Cook until browned. Add dried fruit mixture, herbs and hazelnuts. Cook 2 minutes.
  • Place stuffing mix in large bowl. Add eggs, chicken broth and sausage mixture. Mix well. Let cool slightly.
  • Lay turkey breast skin side down on plastic wrap. Pound lightly with a mallet until even thickness. Season inside with salt and pepper. Spread stuffing in 1 1/2 inch thick layer over meat, leaving a 1/2 inch border on all sides. Roll the turkey like a jelly roll. Lay two rosemary twigs on top and tie the roast.
  • Place the breast seam side down on rack on baking sheet. Brush with melted butter, sprinkle with salt and pepper.
  • Bake 1 1/2 to 2 hours or until thermometer reads 150ºF/68º C. Cover with foil for 15 minutes.

Dulce de Leche Brownies

2 c chopped dark callebaut (some semi-sweet mixed in)

3/4 c butter
---------------> melt in mixer bowl
1 1/4 c sugar
---------------> beat til smooth
3/4 c. flour
1 tbsp cinnamon
2 tsp chipotle chile powder
1 tsp bpow
1 tsp salt
--------------> mix a little (not too much)

Bake @ 350 until done. 

Cool to room temp.

1 can sweetened condensed milk, boiled

---------------> Pour/spread on top
1 c chocolate
1 c whipping cream
---------------> Pour on top
Fridge for a while

Cream Cheese Shortbread

1 1/2 c butter, soft
1 pkg cream cheese, soft
1 1/2 c sugar
---------------------> mix in mixer
1 tsp vanilla
---------------------> add
1 1/2 c coconut, toasted
4 c flour
1 tsp salt
---------------------> add, mix briefly

Roll into balls, bake at 350 for 12-14 minutes.

Dip in white and dark chocolate

(((browned really quickly - use mats, or maybe lower temperature)))

White Chocolate Lime Cheesecake

1 box Nilla wafers, smashed
1/2 c butter, melted
Skimpy 1/4 c sugar

4 pkgs cream cheese
1 c sugar
1/4 tsp nutmeg
4 eggs

4 squares bakers white + 1 1/2 Lindt white - melted
1/4 c key lime juice
2 ish tbsp dark rum

1. Mix first 3 ingredients, press into cheesecake pan, bake for a few minutes (5-8?)
2. Use a mixer for the cream cheese, etc - mix til smooth
3. Add chocolate, lime, run; pour into crust

4. Bake at 325 for about 50 minutes - until middle is almost set
5. Turn oven off, leave cheesecake in for about at least 45 minutes

(((cracked - probably needs a water bath)))

splash of peppermint liqueur

Smushed up candy canes

Raspberry Truffle Fudge

Didn't make layers - just mixed it all together:

6 100g bars chocolate (4 milk, 2 dark)
about a cup semi-sweet chips
can of sweetened condensed milk
1/2 cup whipping cream
about 1/2 c seedless raspberry "jam" (isn't seedless jam = jelly?)
a bit of vanilla

cooked it for a bit... stuck it in a 9 x 9... fridgify... roll into truffles... SUPERGOOD... nice with cocoa powder...
