Garlic and Herb Flatbread

INGREDIENTS

  • 700 grams prepared pizza dough
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (115 g) unsalted butter, melted
  • 3 cloves garlic, minced 
  • 2 teaspoons (10 grams) fresh thyme
  • 1 tablespoon (15 g) finely chopped parsley
  • Kosher salt
  • Freshly ground black pepper

DIRECTIONS

  1. Divide pizza dough into eight pieces. Coat each piece with olive oil. Flatten and stretch dough into rough ovals.
  2. In a small saucepan, over low heat, stir together melted butter, garlic, thyme and parsley.
  3. Heat cast iron skillet over medium-high heat.
  4. Working in batches of two, add dough to skillet and cook until no longer shiny, about seven minutes, flipping after five minutes and brushing with herbed butter. Repeat process with all remaining pieces.
  5. Transfer cooked pieces to a rimmed baking sheet and brush unseasoned side with herb butter. Season with salt and pepper.


INGREDIENTS

  •  1 cup warm water
  •  1 tablespoon honey
  •  1 tablespoon oil
  •  1 tablespoon instant yeast
  •  1 teaspoon salt
  •  2-3 cups flour (see note)

INSTRUCTIONS

  1. In a large bowl or in the bowl of an electric stand mixer fitted with the dough hook, mix the water, honey, oil, yeast and salt. Add the flour gradually until a soft dough forms and pulls away from the sides of the bowl. The exact flour amount will vary so go by the touch and feel of the dough versus the exact cup measurements in the recipe. The dough should be soft and smooth (not leaving a residue on your fingers but not super stiff, either).
  2. Knead the dough for 2-3 minutes (more like 5-6 minutes if kneading by hand or if using whole wheat flour).
  3. Let the dough rest, covered, for 10 minutes. Shape the dough into pizza(s), spread with sauce and toppings, and bake at 475 or 500 degrees on a preheated pizza stone or on a lightly greased baking sheet for 8-10 minutes (for an in-depth look at baking methods, here is a great tutorial).

NOTES

I almost always use 1/2 or up to 3/4 whole wheat flour with good results - I let it knead for a few minutes longer. 
Also, this recipe doubles, triples and quadruples really well. If doubling, use double the amount for all the ingredients. For triple and quadruple batches, increase all the ingredients accordingly except the yeast - only use 2 tablespoons yeast for a tripled batch and 2 1/2 tablespoons yeast for a quadrupled batch. Keep an eye on the flour if increasing the recipe. You want a soft, smooth dough - not too sticky and definitely not overfloured.

Banana bread

1/2 cup (1 stick) unsalted butter
1 cup granulated white sugar
2 large eggs
3 medium bananas, very ripe
1/4 cup milk
1 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Heat the oven and prep the pan: Preheat the oven to 350°F with a oven rack in the bottom third of the oven. Line the loaf pan with parchment, letting the excess hang over the sides. Spray the inside with nonstick cooking spray. → If using nuts, toast them in the oven for 10 minutes as the oven is pre-heating.
  2. Melt the butter: Melt the butter in the microwave or over low heat on the stovetop. → Alternatively, for a more cake-like banana bread, soften the butter (but do not melt) and cream it with the sugar in a stand mixer in the next step.
  3. Combine the butter and sugar: Whisk together the melted butter and sugar in a mixing bowl until combined. (Or cream in a mixer until fluffy.)
  4. Add the eggs: Crack the eggs into the bowl. Whisk until completely combined and the mixture is smooth.
  5. Add the milk and vanilla: Whisk the milk and vanilla into the batter.
  6. Mash in the bananas: Peel the bananas and add them to the bowl. Using the end of the whisk or a dinner fork, mash them into the batter. Leave the bananas as chunky or as smooth as you prefer. If you prefer an entirely smooth banana bread, mash the bananas separately until no more lumps remain, and then whisk them into the batter.
  7. Add the flour, baking soda, and salt: Measure the flour, baking soda, and salt into the bowl. Switch to using a spatula and gently stir until the ingredients are just barely combined and no more dry flour is visible. 
  8. Fold in the nuts or chocolate, if using: Last but not least, scatter the nuts or chocolate over the batter and gently fold them in. 
  9. Pour the batter into the pan: Pour the batter into the prepared loaf pan, using the spatula to scrape all the batter from the bowl. Smooth the top of the batter.
  10. Bake for 55 to 65 minutes: Place the pan in the oven. Bake until the top of the cake is caramelized dark brown with some yellow interior peeking through and a tooth pick or cake tester inserted into the middle comes out clean. Baking time will vary slightly depending on the moisture and sugar content of your bananas — start checking around 50 minutes and then every 5 minutes after.
  11. Cool in the pan for 10 minutes: Set the loaf, still in the pan, on a cooling rack. Let it cool for 10 minutes — this helps the loaf solidify and makes it easier to remove from the pan.
  12. Remove from pan and cool another 10 minutes: Lift the loaf out of the pan using the parchment paper "wings." Set it on the cooling rack to cool for another 10 minutes before slicing. Leftover bread can be kept, covered, at room temperature for several days or wrapped in foil and frozen for up to 3 months.

Recipe Notes:

• Banana Muffins: To make muffins, line a muffin tin with liners and fill each cup to roughly 3/4 full. Makes 8 to 10 muffins.

Butterflake Rolls

Flaky, buttery, and ridiculously delicious (if ever so slightly messy and kind of ugly-ish), these butterflake rolls are simple to make and tremendously tasty. Serve them alongside your favorite Sunday dinner, barbecued meat, or pasta dish. Makes 12 rolls.

Ingredients:

1 tablespoon yeast
3/4 cup very warm water
1/4 cup sugar
1 egg
2 egg yolks
3/4 teaspoon kosher salt
1/2 cup buttermilk
2 1/2 – 3 cups all-purpose flour
1 stick butter, softened

Directions:

Prepare a muffin tin for baking by spraying it with nonstick cooking spray, or tossing a small pat of butter into the bottom of each cup. Set aside.
In a large bowl, mix yeast in 1/4 cup warm water until dissolved. Add the sugar. Whisk, in the salt and eggs. Beat in milk and remaining water until well-mixed.
Use a wooden spoon to stir in about 2 1/2 cups of flour, adding more (up to 3 cups) as necessary to make a soft dough. You want to be able to knead the dough and not have it stick to your fingers, but still have the dough be soft and pillowy. Less is definitely more here.
Knead dough a few times. Roll out dough to 1/2 inch thickness and spread with a thin layer of butter (it should be about 2 tablespoons). Fold dough in half, then spread with butter. Repeat this 4 more times.
Once you've finished buttering, roll into 1/2 inch thickness and cut dough into 1×1 inch squares. Place 3-4 squares upright in each non-stick sprayed muffin tin. Let rise about 45-60 minutes, or until well risen.
Bake in middle rack at 400° F for 15 minutes or until golden brown.

  • 1 package (1/4 ounce) active dry yeast
  • 1/3 cup plus 1 teaspoon sugar, divided
  • 1-1/2 cups warm water (110° to 115°),divided
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/4 cup instant nonfat dry milk powder
  • 1-1/4 teaspoons salt
  • 5-1/2 to 6 cups all-purpose flour

  1. In a large bowl, dissolve yeast and 1 teaspoon sugar in 1/2 cup water. Add the butter, eggs, milk powder, salt, 3 cups flour and remaining sugar and water. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough.
  2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.
  3. Punch dough down. Divide into 27 pieces; shape into balls. Place 18 balls in a greased 13-in. x 9-in. baking pan and remaining balls in a greased 9-in. square baking pan. Cover and let rise until doubled, about 45 minutes.
  4. Bake at 375° for 17-20 minutes or until golden brown. Cool on wire racks. Yield:27 rolls.

Cinnamon Bread

Batter:

1 cup butter, softened
2 cups sugar
2 eggs
2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
4 cups flour
2 teaspoons baking soda

Cinnamon/sugar mixture:

2/3 cups sugar
2 teaspoons cinnamon 

Cream together butter, 2 cups of sugar, and eggs.  Add milk, flour, and baking soda.  Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan).  Mix in separate bowl the 2/3 c sugar and cinnamon.  Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan.  Add remaining batter to pans; sprinkle with last of cinnamon topping.  Swirl with a knife.  Bake at 350 degrees for 45-50 min.  or until toothpick tester come clean.  
Cool in pan for 20 minutes before removing from pan.

Fall is here

Buttery Dinner Rolls

1 egg
1/4 cup water
1/2 cup milk
4 tablespoons sugar
2 teaspoons dry yeast
2 1/4 cups bread flour
1 tsp salt
4 Tbsp butter -- (1/2 stick) melted
  1. Heat milk and water to 90 F in microwave.
  2. Add ingredients to bread pan in order shown. Drizzle melted butter over flour.
  3. Select dough cycle.
  4. After first rise, punch down and form rolls. Place on greased baking sheets, cover with plastic wrap and rise until doubled.
  5. Brush with butter/egg wash if desired
  6. Bake at 350 for 10-20 minutes
