Samoa Cheesecake Bars

INGREDIENTS
FOR THE CRUST
28 
Oreos
5 tbsp. 
melted butter
FOR THE BARS
(8 oz.) blocks cream cheese, softened
1/2 c. 
granulated sugar
large eggs
1/2 tsp. 
pure vanilla extract
Pinch of kosher salt
FOR THE TOPPING
1 1/2 c. 
caramel, divided
1 1/2 c. 
sweetened shredded coconut, toasted
Melted chocolate, for drizzling
DIRECTIONS
  1. Preheat oven to 325° and line a 9"-x-13" baking dish with foil, leaving an overhang for easy removal. 
  2. Make crust: In a food processor, crush Oreos into fine crumbs. Transfer to a large bowl and stir in melted butter until completely moist. Pat crust into prepared pan and set aside.
  3. Make cheesecake layer: In a large bowl using a hand mixer, beat together cream cheese and sugar until smooth. Add eggs, vanilla, and salt and beat until combined. Pour cheesecake mixture over crust and bake until only slightly jiggly, about 35 minutes. Let cool, then refrigerate until completely chilled, at least 3 hours and up to overnight.  
  4. Make topping: When ready to serve, pour 1 cup caramel over cheesecake bars and smooth with a spatula to make an even layer. 
  5. In a small bowl, stir together toasted coconut and remaining 1/2 cup caramel. Spread coconut mixture on top of caramel and drizzle with melted chocolate. 
  6. Refrigerate until chocolate is firm 10 minutes, then slice and serve

Caramel Apple Cheesecake Bars

Crust:
  • 2 cups all-purpose flour
  • ½ cup firmly packed brown sugar
  • 1 cup (2 sticks) butter, softened
Cheesecake Filling:
  • 3 (8-ounce) packages cream cheese, softened
  • ¾ cup sugar, plus 2 tablespoons, divided
  • 3 large eggs
  • 1½ teaspoons vanilla extract
Apples:
  • 3 Granny Smith apples, peeled, cored and finely chopped
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • ½ cup quick cooking oats
  • ½ cup (1 stick) butter, softened
Drizzle:
  • ½ cup caramel topping for drizzling after baked
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
  3. In a large bowl, beat cream cheese with ¾ cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
  4. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.
  5. For the streusel topping: In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.
  6. Sprinkle Streusel topping over apples. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy! Make 16 servings.

Lemon Raspberry Cheesecake

INGREDIENTS
Crust
1 cup flour
½ cup butter, softened
¼ cup sugar
Zest of 1 lemon
Cheesecake
16 ounces cream cheese, softened
½ cup sugar
Zest and juice of 2 lemons
½ teaspoon vanilla
2 eggs
Raspberry Sauce
6 ounces raspberries
2 tablespoons sugar
Juice of 1 lemon
½ teaspoon vanilla



Preheat oven to 350 degrees F and line muffin tin with cupcake liners. Combine all ingredients for crust with hands until small pea sized crumbles form. Divide crust equally between muffin cups and press down with fingers. Bake crust until slightly brown, about 10 minutes. Set aside and allow to cool completely.
Cream the cream cheese using a stand mixer or a hand mixer on medium speed until fluffy, 1-2 minutes. Add lemon juice, lemon zest, vanilla, sugar and beat until there are no cream cheese lumps, 2-3 minutes. Add one egg at a time on low speed until fully combined.
Once crust has completely cooled, equally divide cheesecake mixture between muffin cups. Bake until cheesecake is almost set (it will jiggle and puff up), about 23-25 minutes. Let cool for 1 hour at room temperature, and then an additional 2 hours in the refrigerator.
Once cheesecakes are cooled, make raspberry topping by stirring all ingredients together in a small sauce pan. Simmer on low heat until ingredients combine to form a semi-thick sauce. Set aside and let cool to thicken completely. Top the cooled cheesecakes with raspberry sauce and enjoy!

Cheesecake Sauces

Strawberry Sauce
A la Pampered Chef

1 lb strawberries
1/4 c honey
Lime for zesting

1. Thick slice about 1 cup of strawberries, add about 1 tsp lime zest, 1/4 c honey
2. Microwave 2 minutes
3. Blend til smooth
4. Add rest of strawberries, cut as desired.
5. Super yum - not thick

Raspberry Sauce
Allrecipes (ish)

2 tbsp cornstarch
1 c cold water
6 oz raspberries
1/4 c sugar
(Lime zest)

1. Whisk cornstarch and cold water.
2.  Add raspberries, sugar, mix more.
3. Microwave 3-5 minutes, checking often
4. Purée with blender, then strain out seeds

Lemongrass Coconut Cheesecake

Based on:


2 cups nilla crumbs
1/2 c butter
1/4 c sugar
2 tsp cinnamon

1 stalk lemongrass
1/2 c coconut milk

3 pkgs cream cheese
1 1/2 c sugar
5 eggs

350 - 45 minutes

White Chocolate Lime Cheesecake

1 box Nilla wafers, smashed
1/2 c butter, melted
Skimpy 1/4 c sugar

4 pkgs cream cheese
1 c sugar
1/4 tsp nutmeg
4 eggs

4 squares bakers white + 1 1/2 Lindt white - melted
1/4 c key lime juice
2 ish tbsp dark rum

1. Mix first 3 ingredients, press into cheesecake pan, bake for a few minutes (5-8?)
2. Use a mixer for the cream cheese, etc - mix til smooth
3. Add chocolate, lime, run; pour into crust

4. Bake at 325 for about 50 minutes - until middle is almost set
5. Turn oven off, leave cheesecake in for about at least 45 minutes

(((cracked - probably needs a water bath)))

Caramel Apple Cheesecake

- normal crust (1+ c crumbs, 1/4 c butter, 1/2 c sugar, cinnamon)

- 12 oz caramels, 2/3 c evaporated milk; cooked into dipping sauce (micro + serious patience)

- normal cheesecake (1 pkg, 1 egg, 1/4 sugar)
- 2 green apples, chopped, 1 tsp cinnamon, 1 tbsp flour

1. Make/cook crust
2. Pour caramel to cover crust
3. Chop apples, shake with flour/cinnamon
4. Mix apples, cheesecake
5. Bake
6. More caramel

Cheesecake brownies

Normal cheesecake recipe (1 pkg, 1 egg, 1/4 c sugar)

3/4 c butter
1 1/2 c sugar
3 eggs
1 tsp vanilla
1/2 c cocoa powder

3/4 c flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon

1. Make cheesecake filling
2. Mix butter, sugar, eggs, etc
3. Add flour mixture
4. Put some brownie in muffin cup (any size)
5. Add some cheesecake
6. Cook til cooked (350)
7. (optional) Drizzle with melted chocolate
8. Yummy!!!

Pomegranate & Mango Cheesecakes

Crust:
1/2 c butter
1/4 c brown sugar
1 egg
1 1/4 c flour
- bottom baked for 10ish minutes; sides not baked

Filling:
3 pkg cream cheese (2 light, 1 reg)
3/4 c sugar
3 eggs
1 tsp-ish vanilla

* 1/3 - added 1/3 c mango puree, put on a graham crust
* 1/3 - added 1 tbsp lime juice
* 1/3 - added pomegranate glaze & some juice

Glaze:
1 473 ml bottle POM
1/4 c brown sugar
1 1/2 tbsp cornstarch
- as written

Mango Cheesecake

Allrecipes, I think
1 (9 inch) graham cracker crust

2 (8 oz) pkgs cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs

1/2 cup mango puree

1/2 cup frozen whipped topping, thawed

1 Preheat oven to 325 degrees.
2 In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time.
3 Add mango puree, and stir gently until well blended. Carefully spread over the batter in the crust.
4 Bake in preheated oven for 35 to 40 minutes, or until centre is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

Chocolate Chip Coconut Cheesecake Bars

Chocolate Chip Coconut Cheesecake Bars

1 package Chocolate chip cookie dough
8 ounce Cream cheese, softened
1 Egg
1/2 cup Coconut, flaked
1/2 cup Sugar

1. Preheat oven to 350 degrees F.
2. In a small bowl, combine sugar, egg and cream cheese; beat until smooth. Stir in the coconut.
3. Remove half of the cookie dough from wrapper and press half of the dough in the bottom of a 8" or 9" square pan. Spread the cream cheese mixture over dough. Combine and sprinkle remaining half of cookie dough over cream cheese mixture.
4. Bake at 350? F. for 35-40 minutes or until golden brown and firm to the touch. Cool for 30 minutes.
5. Refrigerate at least 1 hour or until chilled. Cut into bars and serve chilled.

(I forgot to put the coconut in the cheesecake, so threw it on top)

Best Ever Chocolate Chip Cookies II
(Allrecipes)

1 cup butter, melted
2 cups brown sugar
2 eggs
2 2/3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 cups semisweet chocolate chips

1. Preheat the oven to 375 degrees F (190 degrees C). Line cookie sheets with parchment paper.
2. In a medium bowl, stir together the melted butter and brown sugar until smooth. Beat in the eggs one at a time. Combine the flour, baking powder and baking soda; gradually stir into the sugar mixture. Fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
