Raspberry Truffle Fudge

Didn't make layers - just mixed it all together:
6 100g bars chocolate (4 milk, 2 dark)
about a cup semi-sweet chips
can of sweetened condensed milk
1/2 cup whipping cream
about 1/2 c seedless raspberry "jam" (isn't seedless jam = jelly?)
a bit of vanilla
cooked it for a bit... stuck it in a 9 x 9... fridgify... roll into truffles... SUPERGOOD... nice with cocoa powder...

(Chocolate Chip) Pound Cake
Whimsical Bakehouse
8 oz (2 sticks) unsalted butter
8 oz cream cheese
1 ½ c sugar
2 tbsp sour cream
1 tsp vanilla extract
4 large eggs
2 ¼ c cake flour
2 tsp baking powder
¼ tsp salt
1 c semisweet chocolate chips
Grease and flour 2 9-inch round pans. Preheat oven to 350. All ingredients should be room temperature.
With a mixer, beat the butter until light and fluffy. Add cream cheese, mix, add sugar, mix a lot, add sour cream and vanilla, mix, add eggs (one at a time).
Sift together flour, baking powder, salt and add to butter/egg mixture – beat on low speed until smooth.
Stir in chocolate chips by hand.
Pour into prepared pans and bake for 25 to 35 minutes. Cool on wire racks for 15 minutes before taking out of pans.

Sweet Potato Curry
Sweet Potato Thai Curry Recipe | Recipezaar - used a jumbo yam, threw in some potatoes... skipped the spinach
2 sweet potatoes, peeled and in 1/2 cubes
1 onion, Chopped
3 garlic cloves, Finely chopped
2 inches fresh ginger, Finely chopped
olive oil, for saute
1 tablespoon red curry paste
1 1/2 tablespoons panang curry paste
1 (14 ounce) can coconut milk
1 chili (fresh and finely chopped or flakes)
fresh spinach (2 bags of the prepackaged spinach)
1 tablespoon fish sauce
cilantro, for garnish
1 Sauté onion, garlic, and ginger in the olive oil on medium high heat in a large pot until the onion is transparent.
2 Add the sweet potato and pastes. Mix well. Allow for mixture to heat up.
3 Add coconut milk and chili. Stir. Allow for mixture to heat up.
4 Add all the spinach to the pot, but do not mix. Cover the pot.
5 After 5 minutes, the spinach should be wilted. Stir into mixture. At this time, add the fish sauce and stir.
6 Re-lid and let simmer for 5-10 minutes, or until the potatoes are cooked.
7 Serve over rice and add a sprig of cilantro on top.

Buttery Dinner Rolls
1 egg
1/4 cup water
1/2 cup milk
4 tablespoons sugar
2 teaspoons dry yeast
2 1/4 cups bread flour
1 tsp salt
4 Tbsp butter -- (1/2 stick) melted
- Heat milk and water to 90 F in microwave.
- Add ingredients to bread pan in order shown. Drizzle melted butter over flour.
- Select dough cycle.
- After first rise, punch down and form rolls. Place on greased baking sheets, cover with plastic wrap and rise until doubled.
- Brush with butter/egg wash if desired
- Bake at 350 for 10-20 minutes
Makes 12 rolls

a little bit chipotle chili pepper
eggplant, sliced into 3/4 inch slices
bread crumbs
--> smear the mayo on the eggplant, dip in the bread crumbs
--> bbq - 5ish minutes per side;
1/2 cup mozzarella
tbsp parmesan
1/2 tsp ish basil
--> after the flip, add cheese mix on the top side
* decent... peeled ones dried out quickly
1 tsp minced garlic

White Butter Cake
Whimsical Bakehouse
In the bowl of an electric mixer, beat at high speed until light and fluffy:
6 ounces(1 1/2 sticks) unsalted butter
2 cups sugar
1 1/2 tsp. salt
On a piece of wax paper. sift together:
3 1/2 cups cake flour
1 1/2 tsp baking powder
3/4 tsp cream of tartar
Add the dry ingredients to the butter mixture alternately with:
1 1/4 cups milk
3/4 tsp pure vanilla
In a separate bowl beat until foamy:
3/4 cup egg whites (6-8 large egg whites)
Continue beating at high speed while gradually adding:
1/2 cup sugar
When stiff peaks form, fold the whites into the cake batter with a rubber spatula. Blend just until the whites are evenly distributed.
Bake at 350 degrees - 20-35 minutes (toothpick test).
9 cups of batter

3. Slowly pour the hot syrup into the meringue steadily with the mixer still on high.
4. Beat the frosting for 7-10 minutes until the outside of the bowl is room temperature.
5. Beat in butter by the tablespoon. The butter will deflate the frosting a bit. Add in desired flavorings.
Flavorings:
- Chocolate. - 1/2 cup melted and cooled chocolate and 1 teaspoon vanilla extract.
