Lemon Squares

1 c butter, softened

1/2 c sugar
2 c flour

4 eggs

1 1/2 c sugar
1/4 c flour
2 lemons, juiced

Icing sugar for the top



  1. Preheat oven to 350 degrees F (175 degrees C)
  2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan
  3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust
  4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.

Chocolate Buttercream

Ingredients

  • 10 large egg whites
  • 2 1/2 cups sugar
  • 32 ounces (8 sticks) unsalted butter, softened
  • 24 ounces semisweet chocolate, melted

Directions

  1. Whisk whites and sugar in a heatproof mixer bowl until combined. Set bowl over a large saucepan of simmering water, whisking until sugar dissolves and mixture registers 160 degrees on a candy thermometer, about 5 minutes.
  2. Transfer bowl to mixer, and whisk on high speed until stiff, glossy peaks form and mixture is cool, about 10 minutes. Reduce speed to medium, and add butter, 1 tablespoon at a time, whisking until incorporated before adding more. Reduce speed to low, and whisk in chocolate. Raise speed to medium-high, and whisk until well combined. (Buttercream can be refrigerated up to 3 days or frozen for up to 1 month. Bring to room temperature before using; beat on low speed until smooth.)

Ingredients

  • 3/4 cup plus 3 tablespoons unsweetened Dutch-process cocoa powder
  • 1/2 cup plus 2 tablespoons boiling water
  • 3 3/4 cups cake flour (not self-rising), sifted
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon coarse salt
  • 15 ounces (3 3/4 sticks) unsalted butter, softened
  • 2 3/4 cups plus 1 tablespoon sugar
  • 1 tablespoon plus 1 teaspoon pure vanilla extract
  • 5 large eggs, room temperature
  • 1 1/4 cups whole milk

Directions

  1. Mix cocoa powder and boiling water in a bowl until smooth. Let cool.
  2. Sift flour, baking soda, and salt into a large bowl. Beat butter and sugar with a mixer on medium speed until pale and fluffy, 3 to 4 minutes. Beat in vanilla. Add eggs, 1 at a time, beating well after each addition and scraping bowl as needed.
  3. Pour milk into cocoa mixture in a slow, steady stream, whisking until smooth. With mixer on low speed, add flour mixture to butter mixture in 3 additions, alternating with cocoa-milk mixture, starting and ending with flour mixture. Use immediately.

White Chicken Chili

3 chicken breasts, rubbed with spice
Oil
1/2 onion, diced
1 clove garlic

1 can chicken broth
1 bottle Herdez salsa verde
6 Roma tomatoes, diced
1 tsp oregano
2 tsp cumin
1 tsp ancho chile powder
1 jalapeƱo

1 can navy beans
1 can Romano beans
1 1/2 ish cups frozen corn


1. Fry chicken, onion, garlic for a few minutes
2. Add the next bunch of stuff, simmer a bit
3. Pull out the chicken breasts and shred
4. Add back, with beans and corn
5. Cook a bit more (while waiting for the cornbread to be done)
6. Serve with cornbread

Cheesecake brownies - take two

3/4 c. flour
1 tbsp cinnamon
2 tsp chipotle chile powder
1 tsp bpow
1 tsp salt

5 squares semi-sweet
5 squares unsweetened
1 1/2 sticks butter (3/4 cup)
1 1/4 c. sugar
3 eggs

Normal cheesecake recipe (1 pkg, 1 egg, 1/4 c sugar)

1. Prep bowl: flour, etc
2. Melt butter/chocolate
3. Beat in sugar, then eggs
4. Add flour mixture
5. Put some brownie in muffin cup (any size)
6. Add some cheesecake
7. Cook til cooked (350)
8. (optional) Drizzle with melted chocolate
9. Yummy!!!

Grilled Corn and Potato Salad

  • 12 small potatoes (about 1-1/2 lb/750 g), unpeeled
  • 2 Tbsp. (30 ml) fresh lime juice
  • 1 Tbsp. (15 ml) vegetable oil
  • 1/2 tsp (2 ml) ground cumin
  • 2 cobs corn
  • 1 poblano pepper
  • 1 sweet red pepper, diced
  • 1/2 cup (125 ml) light mayonnaise
  • 1/3 cup (75 ml) light sour cream
  • 1/4 cup (50 ml) chopped fresh Cilantro
  • 1/2 tsp (2 ml) salt
  • 1/4 tsp (1 ml) pepper

In saucepan of boiling, salted water, cook potatoes just until tender, about 15 minutes. Drain and cool slightly; peel if desired and cut each in half. Place in large bowl. Meanwhile, in glass dish just big enough to hold corn, stir together lime juice, oil and cumin. Add corn and roll to coat all over. (Can be prepared up to 1 hour ahead.)
Place corn and poblano pepper on greased grill over medium heat; close cover and cook until kernels are golden brown and pepper is charred all over, turning pepper often, about 10 minutes. Remove vegetables from grill. Brush corn with any remaining marinade. Place pepper under inverted bowl. Break corn cobs in half and place cut sides down; cut kernels off with sharp knife. Add to potatoes. Peel, seed and dice poblano pepper; add to bowl along with red pepper.
In small bowl, stir together mayonnaise, sour cream, coriander, salt and pepper. Pour over potato mixture and toss gently to coat. Taste and add more salt and pepper if needed.

Caramel Apple Cheesecake

- normal crust (1+ c crumbs, 1/4 c butter, 1/2 c sugar, cinnamon)

- 12 oz caramels, 2/3 c evaporated milk; cooked into dipping sauce (micro + serious patience)

- normal cheesecake (1 pkg, 1 egg, 1/4 sugar)
- 2 green apples, chopped, 1 tsp cinnamon, 1 tbsp flour

1. Make/cook crust
2. Pour caramel to cover crust
3. Chop apples, shake with flour/cinnamon
4. Mix apples, cheesecake
5. Bake
6. More caramel

Peanut Butter Cookies

Mom

3/4 c margarine
3/4 c sugar
3/4 c brown sugar
1 egg slightly beaten
3/4 c peanut butter
1 tsp vanilla
1/2 tsp soda
1/2 tsp salt
1 3/4 c flour
granulated sugar for rolling


1 Cream margarine and sugars. Blend in egg, peanut butter and vanilla. Add flour sifted with soda and salt) mix well.
2 Chill 20-30 minutes. Form rounded teaspoons of dough into balls, roll in sugar and place on ungreased baking sheet
3 Bake 375 degrees for 10-12 minutes. Yield 5 dozen.

My Macaroni Pie

4 cups macaroni
1/2 cup broccoli
1/2 cup chopped spinach
1/2 cup corn
1/2 cup peas
1/2 package cream cheese (cubed)
1/3 cup shredded smoked gruyere
3/4 cup frozen cheddar
1/2 tsp salt (maybe less)
1/4 tsp pepper
1  1/2 tsp (ish?) curry powder
2 eggs
1/3 cup (ish) "milk"
some garlic
some chives
old cheddar on top

350 - 45 minutes


Taste is good - needs more eggs, cheese for texture

2 Finely shredded carrots

1 large chopped onion

1 chopped tomatoes

1 pkg. cream cheese

Shredded strong cheddar cheese

Shredded regular cheddar cheese

6 well blended eggs, add a little milk to eggs when mixing

1 package of spinach

1 stock of broccoli (cut into bite size pieces)

1.Boil macaroni drain and set aside.
2. Steam broccoli and spinach together till slightly tender, set aside.
3. Mix the macaroni with the broccoli carrots tomatoes onion.
4. Add shredded cheese to mixture.
5. Add the cream cheese cut in cubes.
6. Mix very well add salt and pepper to taste.
7. Add egg mixture.
8. Put that all together in a baking pan cover with some shredded cheddar cheese.
9. Bake it 350 degrees for about an hour.

Banana Bread

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
2 eggs, beaten
1/4 cup butter, melted
3 bananas, mashed

1 Grease and flour two loaf pans. Preheat oven to 350 degrees F (175 degrees C).
2 Whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, melted butter, and mashed bananas. Stir in nuts if desired. Pour into prepared pans.
3 Bake at 350 degrees F (175 degrees C) for 1 hour, or until a wooden toothpick inserted in the centre comes out clean.

Fake Fried Rice

Here’s an amazing Asian-inspired recipe where grated low-carb cauliflower masquerades as rice. This dish delivers all the flavour of real fried rice but with a fraction of the carbohydrates, plus the cauliflower contains vitamin C, folate and disease-fighting phytonutrients. This recipe serves four as a side dish.

2 Tbsp. (30 mL) olive oil
3 green onions, chopped
2 garlic cloves, minced
3 ½ cups (875 mL) raw cauliflower, grated (about ½ head)
3 Tbsp. (45 mL) low-sodium soy sauce
½ tsp. (2.5 mL) fresh ginger, peeled and grated
½ cup (125 mL) diced cooked chicken or baby shrimp (optional)
3 eggs (beaten)

1. Heat olive oil over medium-high heat in large skillet. Fry white part of green onions and garlic for 1 minute.
2. Add grated cauliflower. Stir-fry for 4 to 5 minutes.
3. Add soy sauce, ginger, diced green onion tops and cooked chicken or baby shrimp (if using). Mix well and brown for 1 minute, and then push the mixture to one side of the pan.
4. Scramble eggs in open side of pan until done but moist (add more oil if necessary).
5. Stir eggs into cauliflower rice mix, remove from heat and serve.

Per serving (not including chicken or shrimp):
150 calories; 7.4 g carbohydrate; 7.4 g protein;
11 g fat; 2 g fibre; 503 mg sodium

--> no green onions, a few extra sauces - decent

1/3 cup butter, softened
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup plus 2 tablespoons all-purpose flour
1/4 cup baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup semisweet chocolate chips (or chocolate chunks)

In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg and vanilla. Combine the flour, cocoa, baking powder, baking soda and salt; add to creamed mixture and mix well. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets, forming 8 cookies. Flatten slightly with a greased glass. Sprinkle with chocolate chips. Bake at 375° for 8-10 minutes or until set. Remove to wire racks to cool.

Spicy Chicken Lasagna

1 tbsp butter, melted
1 medium onion, chopped
500 g ground chicken
2 Spolumbo's spicy chicken sausages (squeezed out of casings
1 jar Classico sweet basil marinara
1 pkg mushrooms, sliced
1 generous tsp oregano
1/2 c (ish) water

1 c cottage cheese
1/3 c parmesan cheese
1 egg
1/2 c spinach, chopped

1 pkg mozza, grated
lasagna noodles

1. Saute onion and garlic in melted butter. Add ground chicken, sausage and brown.

2. Stir in tomato sauce, mushroom and liquid, water and oregano. Bring
to a boil and remove from heat.

3. Combined cottage cheese, parmesan cheese, drained spinach, egg, oil
and salt.

4. Spoon 1/3 of meat sauce into 9x13 baking dish. Cover with 1/3 of
lasagne. Repeat with meat and lasagne.
5. Spread cheese and spinach mixture and then add remaining lasagne and
meat sauce. (Add water if this looks skimpy on moisture over noodles.)
6. Top with Mozzarella cheese, cover with foil.

7. Bake 375 degrees for 45 minutes. Remove foil and cook 15 minutes more
to brown.

Toffee Crunch Blondies

Chipits Skor bag recipe

1/2 c butter, softened
1 c brown sugar
2 eggs
2 c flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 bag Skor bits (200 g)
1 c chocolate chips (optional)

1. Beat butter, sugar, eggs until well blended
2. Add flour, baking powder, baking soda, salt; mix well
3. Stir in 1 cup Skor bits, chocolate chips if desired
4. Spread evenly in greased 9x13
5. Bake @ 350 for 23-28 minutes, until golden brown
6. Remove from oven and immediately sprinkle with remaining Skor bits.
7. Cool. Cut. Eat.

--> I subbed unsweetened coconut for the choc chips in about half the recipe.

Spinach Lasagna

made in Montreal - allrecipes maybe?

1 tablespoon olive oil
1/2 onion, chopped
1/2 teaspoon oregano
1/2 teaspoon basil
1 clove garlic, minced
1 jar spaghetti sauce
1 1/2 cups water
2 cups cottage cheese
1 package mozzarella, shredded
1/4 cup grated parmesan
1/2 cup chopped parsley
2 packages frozen chopped spinach
1 teaspoon salt
1/8 teaspoon pepper
1 egg
lasagna noodles

Directions
1 SautƩ onion, oregano, basil and garlic in olive oil. Add spaghetti sauce and water and simmer 20 minutes.
2 Mix cottage cheese, half of the mozzarella, parmesan, egg, parsley, spinach, salt and pepper.
3 Place 1/3 sauce in the bottom of a 9x13 pan. Cover with layer of uncooked noodles. Top with another layer of sauce and layer of noodles. Spread with cheese mixture, and cover with noodles. Finish with sauce, and top with the rest of the mozzarella.
4 Cover with foil and bake at 350 degrees for 50 minutes. Remove foil and bake another 15 minutes. Let stand 10 minutes before serving.

Blueberry Cream Cheese Muffins

1/2 pkg light cream cheese
1/2 tbsp lime juice (subbed for lemon)
2 tsp vanilla
2 eggs
1/2 c milk
4 tbsp melted butter
1 c all-purpose flour
1 c cake flour
3/4 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
3/4 c frozen blueberries? ish?

cinnamon sugar

1. Preheat to 350
2. Beat cream cheese, lime, vanilla; add milk, butter
3. Mix dry ingredients, add to above
4. Fold in blueberries quickly & gently
5. Fill muffin cups about 3/4 full. Sprinkle with cinnamon sugar
6. Bake 25-30 - until golden brown (24)

So-so - can't taste the cream cheese, not a fan of the lime (!)
